An apple or pear brandy of distinction, calvados – an eau de vie de cidre – has been produced and consumed within its namesake region of Lower Normandy for about a thousand years, but remains a decidedly niche spirit beyond the borders of France. As a cocktail ingredient it barely appears outside of the Widow’s Kiss, or in the Jack Rose as a stand-in for the even more elusive applejack. A legally protected appellation, the spirit must be produced within the Calvados region of Normandy and exists across three categories: AOC Calvados, which only requires a single distillation and ageing in oak for a minimum of two years; AOC Calvados Pays d’Auge, which must be made with fruit grown in the Pays d’Auge geographical area within Calvados, and then double-distilled; and Calvados Domfrontais, blending apples with a minimum of 30 per cent pears grown in the Domfront region nestled within the wider Calvados area and single distilled. A “Domfrontais” labelling requires maturation for a minimum of three years in oak.
